The project is structured into work units for the continuous communication with the food industry, the compliance with Quality Assurance Systems and conduction of laboratory testing, to increase business benefits and perform risk assessment.

To carry out the tests, the work modules include a series of specialized controls.

Initially microbiological testing of samples is carried out to determine the health status of food and processing surfaces and to identify a sufficient number of isolates from each pathogenic micro-organism. Microorganisms such as L. monocytogenes, Salmonella spp and Enterobacteria are used as microbiological markers.

Isolated microbiological strains are tested for their phenotypic and genotypic characteristics in order to correlate the results with isolation data (origin, isolation time, geographical area) and create a “network” of characteristic properties to identify the origin of a strain. Real-Time PCR and DNA sequencing are provided, to  find contaminations of foreign DNA in meat products.

At the same time, depending on the processing of the samples, selected food samples are tested for the presence of chemical contaminants or additives such as nitrates, nitrosates, nitrosamines and PAHs in order to determine and quantitate specific chemical contaminants / additives.

A new imaging technology is a special module of work and aims to determine the overall food quality and safety of the sample. Through multi-spectral imaging accurate and reliable detection of chemical substances and foreign material of the samples is carried out. Spectral imaging is performed using the Videometer, which will determine the possible correlation of multispectral images with microbiological / chemical characteristics of the sample.

Laboratory tests produce a multitude of data that will be gathered in an initial database and then they will be analyzed statistically. Multi-variable statistical data analysis is a special module of work. Statistical tools and techniques will be used to evaluate the data and to show desired information on the quality and safety of products in the Food Industry.

The development of the E-platon digital platform will take place in a friendly online environment where the user will have access to the confidential “mapped” information of all tested samples. The user will be able to register the laboratory data of his own products and to process statistically all the information.

The web platform will allow registered users to update it with data from other pathogenic bacterial, genotypic or phenotypic genes or from other chemical contaminants. By continually updating the E-platon the field of use will be expanded and the validity of the results will be enhanced.
